Ingredients:

  • 2 medium zucchinis, grated

  • 1 medium carrot, grated

  • 1 cup shredded cheese (mozzarella or your favorite)

  • 2 eggs

  • 3–4 tablespoons chopped green onion

  • Salt and pepper to taste

  • Optional: 1 clove garlic (minced) or ½ tsp garlic powder

  • 3 tablespoons flour or breadcrumbs (for texture)

  • Olive oil for frying
