A creamy-spicy soup loaded with shrimp, herbs, and coconut flavor.
Ingredients
• 300g (10 oz) shrimp, peeled
• 2 cups (480 ml) coconut milk
• 1 cup (240 ml) chicken or veggie broth
• 2 tbsp Thai red curry paste
• 1 tbsp fish sauce
• 1 tbsp lime juice
• 1 tsp sugar
• 1 cup mushrooms, sliced
• 2 kaffir lime leaves (optional)
• Fresh cilantro and chili, to garnish
