– 1 lb ground pork (or beef)
– 1 lb mushrooms (enoki, shiitake, beech or a mix), trimmed and cleaned
– 2 cloves garlic, minced
– 1 inch ginger, minced
– 2-3 red chilies, finely chopped (adjust to your spice preference)
– 2 tbsp soy sauce
– 1 tbsp oyster sauce (optional, adds umami)
– 1 tbsp Shaoxing rice wine (optional, adds depth)
– 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
– 2 tbsp vegetable oil
– Salt and pepper to taste
– Green onions, chopped (for garnish)

Instructions:

1. Prepare the ingredients: Minced the garlic and ginger, chop the chili peppers finely, and trim/clean the mushrooms. Mix the cornstarch with water to create a slurry.
2. Stir-fry the meat: Heat 1 tbsp of vegetable oil in a wok or large skillet over medium-high heat. Add the ground meat and stir-fry until browned and cooked through, breaking it up with a spatula as it cooks.
3. Add aromatics: Add the minced garlic and ginger, and stir-fry until fragrant (about 30 seconds).
4. Add chilies: Add the chopped chilies and stir-fry for another minute.
5. Add mushrooms: Add the mushrooms to the wok and stir-fry for 2-3 minutes until they start to soften.
6. Season and thicken: Add soy sauce, oyster sauce (if using), rice wine (if using), salt, and pepper. Stir well to combine. Pour in the cornstarch slurry and stir constantly until the sauce thickens.
7. Garnish and serve: Remove from heat and garnish with chopped green onions. Serve hot with steamed rice or noodles.
