Directions:

Red Velvet Strawberry Cheesecake

Preheat oven to 350°F (175°C). Grease and line an 8-inch round pan. Whisk dry ingredients. In a separate bowl, mix oil, buttermilk, egg, vanilla, food coloring, and vinegar. Combine wet and dry ingredients, then bake for 25-30 minutes. Cool completely.

Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing after each. Stir in vanilla. Pour into a greased 8-inch springform pan and bake at 325°F (160°C) for 40-45 minutes. Cool, then refrigerate for 2 hours.

Place cooled red velvet cake on a platter. Add cheesecake on top. Melt strawberry preserves and spread over cheesecake. Garnish with fresh strawberries and whipped cream.

Chill for 1-2 hours before serving.
