Directions:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin). Set aside.
In a separate bowl, beat cream cheese until smooth. Add sugar, egg, and vanilla and mix until well combined and creamy.
Pour half of the chocolate batter evenly into the prepared pans.
Spoon cream cheese mixture in dollops over the batter, then pour remaining chocolate batter on top to cover.
Bake for 30–35 minutes, or until a toothpick inserted into the center comes out mostly clean.
Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Optional: Frost with chocolate ganache or dust with powdered sugar.
