Instructions
- Rinse gizzards thoroughly, trim, then halve under cold water.
- Boil half a pot of salted water, and stay close.
- Add gizzards and boil moderately for 20 minutes attentively.
- Initially, maintain high heat, then reduce after 5 minutes.
- Drain gizzards, rinse them under cold water, and air dry.
- Slice onion and garlic, and set the slices aside.
- Preheat oil and saute prepared gizzards on medium heat carefully.
- Add onions and garlic when gizzards start browning slightly.
- Season with bouillon powder or salt, just a pinch.
- Saute until onions, garlic, and gizzards acquire a golden hue.
- Top polenta with sauteed gizzards, and drizzle with gizzard oil.
- Alternatively, serve over rice or potatoes or by itself. Enjoy!
