Step 1: Toast the Rice

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add chopped onion (if using) and sauté until soft and translucent (about 3–4 minutes).
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Add rice and toast for 1–2 minutes, stirring frequently, until lightly golden.

Step 2: Add Liquid & Lemon

  1. Pour in water or broth, lemon juice, and zest. Stir well and season with salt.
  2. Bring to a boil, then reduce heat to low, cover, and simmer for 15–18 minutes (or according to rice package instructions).

Step 3: Rest & Fluff

  1. Remove from heat and let the rice sit, covered, for 5 minutes .
  2. Fluff with a fork and stir in fresh parsley before serving.
