Limoncello Mascarpone Dream Cake

🍰 Ingredients

For the Cake:

  • 3 large eggs (room temp)

  • 1 cup (200g) granulated sugar

  • ½ cup (115g) unsalted butter, melted & cooled

  • 2 tbsp freshly grated lemon zest (about 2 lemons)

  • ¼ cup (60ml) limoncello liqueur

  • 1½ cups (190g) all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ cup (120ml) buttermilk

  • 1 tsp vanilla extract

For the Mascarpone Frosting:

  • 8 oz (225g) mascarpone cheese, chilled

  • 1 cup (240ml) heavy cream, cold

  • ⅓ cup (40g) powdered sugar

  • 1 tbsp limoncello (optional, for extra zing)

Optional Garnish:

  • Lemon slices, zest curls, or edible flowers
