
Low Point Chickpea Salad
Instructions:
1. In a medium bowl, combine the chickpeas, celery, red onion, and parsley.
2. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper.
3. Pour the dressing over the chickpea mixture and toss to coat.
4. Refrigerate for at least 30 minutes before serving.
