Stir-fried Pork Belly with Green Onions Recipe
Instructions
1. Prepare the pork belly: Pat the pork belly cubes dry with paper towels. This helps them crisp up better during cooking.
2. Sear the pork belly: Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the pork belly cubes and sear until golden brown and slightly crispy on all sides. Remove the pork from the pan and set aside.
3. Stir-fry the green onions: Add the remaining vegetable oil to the pan. Add the white parts of the green onions and stir-fry for 30 seconds until fragrant.
4. Combine and finish: Return the seared pork belly to the pan. Add the soy sauce, rice wine (if using), oyster sauce (if using), sugar, ginger, and black pepper. Stir-fry for 2-3 minutes, allowing the sauce to coat the pork belly evenly.
5. Add green tops: Add the green parts of the green onions and stir-fry for another minute until they are wilted but still bright green.
6. Serve: Remove from heat and serve immediately. This dish is best enjoyed hot.
Tips and Variations:
– For extra crispy pork belly, you can pre-boil the cubes for 5 minutes before searing to remove some of the fat.
– Adjust the amount of soy sauce and sugar to your preference.
– You can add other seasonings, such as garlic, chili flakes, or five-spice powder, to enhance the flavor.
– Serve with rice or noodles for a complete meal.
– Consider adding a splash of water or broth towards the end of cooking if you prefer a slightly saucier dish.
