Pot Roast with Potatoes and Carrots
Ingredients:
1.5-2kg beef chuck roast

2 tbsp olive oil

Salt and pepper to taste

1 onion, chopped

4 cloves garlic, minced

4 large carrots, cut into chunks

500g baby potatoes or large potatoes cut into chunks

2 cups beef broth

1 cup water

2 tbsp tomato paste

1 tbsp Worcestershire sauce
2 sprigs fresh thyme

2 bay leaves

Fresh parsley for garnish
