* 1/2 cup chopped celery
* 1/4 cup chopped red onion
* 1/4 cup chopped fresh parsley
* 2 tablespoons lemon juice
* 1 tablespoon olive oil
* 1/2 teaspoon Dijon mustard
* Salt and pepper to taste
